These days? One who is actually....a man.....physically.
A man who takes being a man seriously. On all levels, 24/7, for 365 days, year in, year out.
Honor
Duty
Loyalty
Honesty
Courage, both moral and physical
Protecting women and children
And a host of virtues that both sexes should ascribe to, excepting the manly role of protector.
( spare me the ideology feminists and I'll spare you the truth )

Confidence, a strong sense of right and wrong and willing to beck up what is right. Also one who wears his pants without them sagging below his buttocks.

A certain physical fitness stemming from hard graft.
Wisdom regarding how things work and the ability to fix them.
He has tools and knows how to use them :)
I'm not a fan of gender "stereotypes". I think everyone .. Man and woman should be respectful, kind and caring. Telling our sons that they need to be "manly" continues the myth that men and women need to have different traits. I know men and women are always going to be different .. But it seems to me to be much better to try to narrow those differences as much as possible so we can more easily relate to each other.
