Isn't the official performing the wedding enough ? Why are 2 signing witnesses needed?

Off the top of my head, I'd think it would be so someone could not be coerced against their will. You could bribe one person, a total of three people though doable, would be harder.

Although maybe I just have an active imagination. I think I'll look it up. Got me curious now.

I think in Florida you only need to have one witness, but there can be two. The person officiating can't be a the witness because they are in the ceremony that is being witnessed.
