I Love Brie. Can You Recommend It In A Sandwich?

Brie is a lovely cheese. My preference has always been French, but you should try something more local to you!
It is a great cheese for using in a sandwich (or panini), and really nice toasted.

What you'll need:
cranberry jelly - 2tsp
small spinach leaves - handful, washed
bacon - 2 - 3 rashers
brie - a couple of reasonable slices.

- cook your bacon to your preferred crispiness!
- lightly toast your bread/panini
- spread some cranberry jelly on each slice
- on one slice place on your spinach leaves
- top with the cooked bacon
- lay on the brie slices
- season to taste with salt and pepper
- cover with the over slice of bread

If you are using a panini you can then toast it.
If you prefer you can make an open sandwich with a slice of baguette, panini or thick bread. This way, once you top with the brie you can lightly grill the sandwich and melt the cheese.

Try this:

   Cut a tomato into thin slices. Set them aside. In a bowl, combine just enough basalmic vinegar and extra virgin olive oil to cover the bottom. Blend with a fork. Add, to your taste, salt, pepper, and spices.  Blend those into the mixture.

    Now, add the tomato slices. Cover all of the tomatoes in a thin layer of the oil mixture. I like to chill this for a little while while I toast my bread and slice some brie.

    Layer the marinated tomatoes on toast and add the cheese. You can also serve it with lunch meats.
