    Ratatouille (RAT-EH-TOO-EY) is a vegetarian casserole dish with eggplant, zucchini, and tomatoes.  A good recipe for Ratatouille is to take 1/3 cup olive oil and heat it in a pan, adding 3/4 cup sliced onion.  Saute the onions with a little minced garlic until they are golden.  Combine in a casserole pot in alternate layers with 4 green bell peppers (sliced), 2 1/2 cups diced and peeled eggplant, 3 cups sliced zucchini, and 2 cups quartered tomatoes.  Bake tightly covered in a moderate oven for 35-45 minutes.  Uncover for the last 10 minutes to reduce liquid.  Add salt and pepper to taste.
