Studies conducted by Agricultural Research Service 1998 show a comparison of vitamin bioavailability between raw vegetables and cooked one signifies a great difference. Though considering these aspects we should prefer raw than cooked, but we must remember that not all vegetables can be taken raw, like few raw seeds and nuts.

Hi normally is better to the vegetables which are raw to eat as it's better for the health and it's fresh, the cooked ones killed the vitamin in the vegetable because of the boiling , which was too hot,but as what have talked above that we can not eat all the raw vegetables ,as some of them should cook for eating so the important is to get the most of its vitamin and the way of how to get it.

It seriously depends on the kind of vegetables that you desire to eat in a raw state. It is highly preferred and advised by nutritionists to eat leafy and green vegetables in a raw state. Carrots, cucumbers and salad leaves serve as a good example here. When you eat these vegetables in a cooked from, then these vegetables are more likely to lose all their nutritional value.
