    ¼ heavy creams
    1 vanilla bean, split and scraped
    1 cup vanilla sugar
    6 large egg yolk
    2 quart hot water

    Preheat the over at about 320 degree F. Add in the cream, vanilla bean along with its pulp into a pan putting it to boil on low heat. After sometime remove the pan from the stove and allow it to cool down for almost about 15 minutes. Remove the vanilla beans from it and keep it aside for after use. In another bowl add about ½ cup sugar and mix in the egg yolk, finely mixing it all together.

    Now add cream in it slowly and gradually. Pour the mixture in 6 ramekins and place these ramekins in a cake pan. Now put water in it cake pan in such a way that the ramekins are half covered with water. Bake for 40 to 45 minutes. Remove it from the refrigerator for 2 hours. Remove it from the refrigerator and pour on top of it ½ cup of vanilla sugar equally on each. Melt the sugar using a torch making a form of crispy top. Now let it set for 5 minutes and then serve.
