¼ cups ghee
10- 15 dried chilies, soaked and ground to a paste
1 cup meat curry powder
5 cinnamon sticks, each about 2 in long
3 star anis
1 handful curry leaves
10 potatoes, peeled and quartered
1 chicken, cut into small pieces
2 ½ cups coconut milk
salt to taste
1-2 teaspoon sugar
spice paste
15 shallots
4 cloves garlic
1 in ginger roots
Blend the spice paste ingredients until fine. Melt the ghee in a large pot, sauté the blended items, and then add chili paste and curry powder, mixed with a little water to make a paste. Continue frying until fragrant, and then add cinnamon, star anis, curry leaves and potato. Put in the chicken and sauté until the chicken is half cooked? Add coconut milk, season with salt and sugar. Simmer until done. The common use of cinnamon and star anis gives a robust flavor to this Indian chicken curry. This curry is a delicious and different cuisine which serves to be one of the best dishes in Malaysia.
