You need to connect your iPod to your computer, open iTunes, from the left-hand side menu, select the "Music" folder under your iPod icon and then delete all the songs that you no longer want/need.

You have to delete the songs you don't want iTunes since iPod is sort of iTunes' slave,meaning iPod just keep what iTunes is having. So delete the songs that you do not need any more in your iTunes before sync your iPod to the iTunes.
