How Is Kheer Made?

    A northern favorite, this rice pudding is very different from the bland of version which countless children have to endure in their homes or boarding schools in Britain.

    ½ cup long-grain rice, washed and drained
    3 cups milk
    2-3 green cardamom pods, bruised
    2 tablespoons blanched slivered almonds
    Pinch of saffron threads, soaked in a little hot milk
    1 tablespoon skinned pistachio nuts, chopped
    1 tablespoon raisins
    3-4 tablespoon sugar

    Put the rice, mild and cardamom into a pan, bring to a boil and simmer gentle until the rice is soft and the grains are starting to break up. Add the almonds, saffron, pistachios and raisins that are if you wish or like to use them, and simmer for 3-4 minutes. Add sugar and stir until completely dissolved. Removed from heat and serve either warm or chilled, according to one's need. Universally popular in the south of India, kheer is made of sweetened milk and a variety of nuts, dal, pearl sago or even wheat-flour vermicelli added. This version uses Bengal gram and id enriched with coconut milk. This sweet dish is very famous among the children; it is the simplest and the quickest way of entertaining them.

      I buy kheer mix from www.theasiancookshop.co.uk/ , its very good. there's also one with vermicelli, delicious. i usually add chopped fresh banana in to it.
