I Need A Good Recipe Or Cooking Tips For Cooking Free-range Chickens. Can You Help?

I have chickens that were raised on my family farm. After butchering them and roasting them in a roaster pan, the meat still is pretty tough. I would love if anyone had any ideas on how to cook them to make the meat more tender.

    I have a group called the Soup Group, and in there there is a section for chicken recipes, I have one in there for an orange tomato glaze chicken. You might like it, it is always moist. You can also add a little juice to it for more moisture. Hope this helps you out.

      Marinading meats help to soften them. Although it will take a while (most recipes require you soaking the chicken in it all night) it is worth it for the taste that goes right through the now-tender meat.
