Rosemary is particularly suited to lamb, pork and focaccia. It can also be used to add flavour to baked potatoes and to make a herb butter for vegetables.
Rosemary foliage can be used to flavour fish and also chicken. Rosemary blooms go nicely with salads, and can be added to olive oil to give more flavour.
If rosemary is used sparingly, the flavour goes well with sorbets, ice creams and fruit salads. It can also be used as a bouquet garni in soups, stews and casseroles.
Rosemary can be chopped and used in sauces and stuffings for different meats and you will often find Italian breads that are flavoured with rosemary leaves. Whole sprigs are used for roasted vegetables for flavour, although they should be removed after cooking. This applies to rosemary leaves as well.
Dried rosemary should be crushed before adding it to a dish, as it is difficult to remove the sharp leaves after cooking.
