Perhaps you are comparing American salutations to British ones. Every culture is different. American greetings do tend to be less formal. The reason for this is hard to establish. Perhaps it has something to do with the American Revolution! In the 1700's the Americans broke away from British rule. They began to form their own customs and culture. A change in customary greetings would have arisen from this.
Greetings are very tied up with language. It is a well-known joke that although the British and Americans speak the same language, they can struggle to understand each other. They use different word for objects - for instance, a 'buggy' in the UK is a 'stroller' in the USA. A shopping 'trolley' in the UK is a shopping 'cart' in the USA. And the list goes on. There is no easy explanation for why American greetings are different to British ones; language styles are simply different and add to the richness of world cultures.
