What Grain Is Polenta Made From?

    Polenta is popular in Italy, Austria, Croatia, Slovenia, Serbia, Romainia, Bulgaria, Argentina, Brazil and Mexico.  It is made from either coarsely, medium or finely ground dried yellow or white cornmeal.  

    Cornmeal is flour that is made from ground maize and it has a variety of uses especially as a staple food in many parts of the world.

    Polenta has a smooth creamy texture when boiled; this is caused by the presence of starch molecules dissolved into the water.  

    It can be served in a variety of different ways, as a first course, baked, with stews, or as a bread substitute.
