The choice to go "vegetarian" in itself is a healthy move, as it will immediately eradicate your fat and calories gained from meats, especially those with fatty parts or skin (such as bacon and chicken).
The vegetarian diet can either be fully vegetarian, which means no animal meat whatsoever OR the partial vegetarian diet which includes fish. Many vegetarians choose to continue eating fish for protein, and as a preference, feel that meat is far less appealing than fish anyway.
A healthy vegetarian diet can be maintained with a good intake of fresh fruit and vegetables. You can continue to eat animal fats, such as milk, cheese and butter. However you must not try to compensate for the loss of meat calories with a high fat dairy intake. You should choose lower fat options where possible and avoid using too much oil or butter in cooking. Cheese is sometimes used to bring flavour to vegetarian meals such as bakes and mashes but use this sparingly as it is a source of high fat.
Your diet should also include the regular healthy carbohydrates such as wholemeal bread, pasta and potatoes.
