    Ingredients to make Spanish Omelette
    • 4 medium-sized peeled and finely sliced potatoes
    • 6 eggs
    • 1 finely chopped onion
    • 1 chopped green pepper
    • ½ cup olive oil
    • salt and pepper to taste
    Method

    Place a saucepan over oven and heat the oil. Now add the potatoes and fry them gently till semi-softened. Now add onion and green pepper and continue frying till tender. Next, drain the excess oil. Now beat the eggs with salt and pepper. Then add the vegetable mixture and mix up well. Now heat a slight amount of oil in a frying pan in a medium heat. Add the potatoes and eggs and toss the frying pan from time to time. It won't allow the omelette to stick to the bottom. Once the bottom part of the omelette is set, put down the heat and cover the pan properly. Next, you just turn over the omelette after 5-7minutes and fry for 2-3minutes. Be careful so that it doesn't stick to the bottom. As it will be all set in both sides, serve it in serving dish. Your Spanish Omelette is now ready to serve. In Spain it is known as Tortilla de patatas.
