To prepare a mini Yorkshire pudding, you need the following items: 1 egg, 85g/3oz plain flour, vegetable oil and 85ml/3fl oz milk and water mixed. To make the horseradish cream, you require: 1 tub crème fraise, salt and pepper and 2 tbsp fresh horseradish. For the filling you require: 2-3 beef fillets and flat leaf parsley, to garnish.
To prepare the Yorkshire puddings, add the egg to the flour smoothly. Gradually add water and milk to the blend, stirring constantly to keep it even. Put little drops of oil into each tiny muffin dish and set into a medium hot oven to warm up. When the tray is hot, pour 2.5cm/1in of assortment into each gap and restore in the oven. Cook for about 8-10 minutes awaiting the assortment has puffed up. Then cool on a cooling rack. To prepare the horseradish cream, just mix all the ingredients together. Yorkshire pudding requires 4oz of plain flour, 1 egg, 1/2 pint of milk, a pinch of salt and pepper. You need to preheat the oven to 220oC. Place a baking tin into the preheated oven with three tablespoons of cooking oil.
