Because God designed them that way .otherwise they would fall over when sleeping because their balance would be off..if their knee bent the other way the flamingo would not be able to fold it's leg up under it's body in order to sleep or fly right..the knee locks the other way in order to keep the leg up in line with the body when flying so the flamingo does not have to waste energy to keep them straight ..that is what i think...
