    Chuck is a cut of beef from the shoulder of the animal.  They have a wonderful flavor, but can be tough.  The chuck area contains the shoulder blade, which divides two muscles, the flatiron and chuck tender.  When cooking chuck, you will need to cook it slow and low, to remove the fat and gristle.  Or, marinate it overnight.
