    Peel four heads of garlic and roast cloves, drizzled with olive oil and sprinkled with salt and pepper on a baking sheet at 350 degrees for about 20 minutes, tossing every 5 minutes to ensure even roasting.Remove from oven and cool slightly before pureeing with olive oil in a blender or food processor. Cut up approx five pounds of potatoes into even chunks and boil unitl fork tender. Drain, reserving approx 1 cup of potato cooking water. Mash with 8 oz cream cheese, 8 oz sour cream.If they seem too thick, thin with reserved water to desired consistency. Add garlic, 1 stick butter, and approx 1 cup of freshly grated parmigiano regiano cheese to potatoes.
