I recently got a recipe for a lion cake from ebay. I searched 'lion and cake' and came across somebody who has a whole list of cake recipes and instructions, including a castle cake like the one you described.

You can try Carvel...they make all sorts of "designer" ice cream cakes. If not there, try other specialty Ice Cream shops.
