How Do I Cook Roast Potatoes?

    Select medium sized potatoes and peel. Cut a shallow cross into the flat wide surface of the potatoes and place in a pan of salted, cold water.

    Bring the pan of water to the boil and simmer gently for ten minutes. Immediately remove the potatoes from the boiling water and place on sheets of absorbent kitchen roll until the potatoes feel dry to the touch.

    When dry, baste the potatoes with cooking oil and place in a greased baking tray. Place the potatoes in a pre-heated oven at 180 degrees of centigrade for 45 minutes or until the potatoes are suitably golden brown.

    During cooking, remove the potatoes at least twice and turn and rebaste each before returning to the oven.

      Cut them in bite size pieces.  Place on cookie sheet drizzle with oil, salt and pepper, put in a 400 degree over for about 23 minutes of until fork tender.
