Four skinless, boneless chicken breast halves – round about 1/4 inch thickness, ground black pepper (to taste ), olive oil (1 table spoon), minced garlic (1 tea spoon), mayonnaise ( 2 table spoons), mustard paste (2 table spoons), chopped fresh rosemary (1 table spoon), eight slices garlic and the rosemary focaccia (An Italian bread with olive oil and herbs) bread.
Now let us start its preparation. Sprinkle or dust the pepper only on one side of each chicken cutlet. Then heat the oil in a large skillet. Then put garlic paste and heat it until it gets brown, after that add the chicken, put the pepper-side-down. Fry chicken briefly over high heat until cooked through and the juices run clear. It will take round about 12 or 15 minutes. Now in a medium sized bowl mix the mayonnaise, the mustard and rosemary. Mix them together and then spread this mixture on 4 slices focaccia bread. Place one of the chicken cutlets on each of these slices, and then top each with another bread slice. These sandwiches are so great when you want a quick supper, and not something from the freezer.
