      Rue should be refridgerated until planted - if you plan to use it for a liquid you should also refrigerate for 7 days after preparation.

        "Roux" is what I think you are referring to.  It is pronounced the same.

        Roux is used as a thickener.  It can be used as the first step in a recipe such as gumbo, or it can be made in advance and kept in the fridge for thickening pan sauces and gravies.

        To make roux for storage, heat a good solid pan nice and hot.  Add vegetable oil and margarine - don't use good olive oil and butter for this unless you are feeling extravagant that day - and let it get nice and hot.  Add flour and stir until smooth.  Let this cool, pour it into clean containers, and refrigerate.  It will keep almost indefinitely.
