Which Is More Nutritious: Fresh, Tinned Or Frozen Vegetables?

    Unless your fresh vegetables are very fresh, it is likely that frozen vegetables may have more vitamins and nutrients.  Fresh vegetables may be more tasty and attractive, but it is important to buy them as fresh as possible, or the frozen varieties will win hands down.  This is due to the way that frozen vegetables are quickly processed (within 90 minutes for some peas : from picked to being frozen).
    Tinned vegetables have usually been exposed to high temperatures which destroy a proportion of the vitamins, although the mineral content is unaffected.  However, they can be a good 'store cupboard' item, to be used if you run out of fresh or frozen vegetables.
    Many people find that growing their own vegetables is satisfying since they know exactly what pesticides or insecticides were applied and vegetables can be harvested ona  daily basis thus assuring that they are extremely fresh and packed full of vitamins.
