How Is Vichyssoise Prepared?

    The Vichyssoise is a heavenly American creation. The preparation is also simple and the required ingredients are:
               
          3 large leeks, white parts only, washed well and sliced thinly
    2 Tablespoons butter
    2 medium potatoes, peeled and sliced thinly
    3 cups chicken stock
    1 teaspoon salt
    1 cup milk
    1/4 teaspoon white pepper
    1 cup whipping cream
    First, melt the butter in a saucepan in low heat and then stir in the leeks and
    sauté at low temperature. Wait till its golden brown and then add the stock and salt and bring it to a simmer and keep it covered for 40min. Strain the puree in through a sieve to get a fine paste. In the saucepan add milk, pepper and bring it to a simmer. After removing that from heat, add the cream and adjust the required seasonings. Chill it overnight and sprinkle chopped chives before serving. Your tasty Vichyssoise is ready.
