As your roommate is not on the lease, you can't serve an eviction notice. Just ask her to leave the apartment and threaten her if she will not leave, you have to make a complain. At the end you have to get her stuff out of the apartment.

I would ask her/tell her to leave and give her  till the end of the week to find a place to stay and to get everything that is hers out of the apartment. But if she refuses then get all her stuff and put it in plastic trash bags and put it out in the lawn so when she comes home she has no choice but to leave. But if she has any furniture that is hers then i guess you will have to tell her that she better get it out or your giving it away.

By Law if she receives mail there or has lived there for more than 2 weeks you have to file for eviction at your local magistrates office no matter if she is on your lease or not.
