The curdling of milk occurs in various ways like acidification or forced methods of acid curling. It has nothing to do with calcium. It happens due to the formation of lactic acid in milk due to certain bacteria. Calcium is just an element that is present in milk it is in no way related to the acidification that occurs in the milk.
