Can I Use Olive Oil When Making Roast Potatoes?

    No, there are two problems when using olive oil for dishes such as roast potatoes.  The first is the flavour.  Olive oil has a distinctive taste and this will permeate the roast potatoes and diminish their taste.  The second is that roast potatoes require a very high heat, to become lovely and crisp and olive oil cannot really stand this kind of heat.  So if you are concenred about using saturated fats, then use vegetable oil instead.  It can withstand the heat and does not 'taste' the potatoes so they are still full of potato flavour.
    However, the best way to cook roast potatoes is actually to use goose fat which makes for divine roast potatoes.  Whilst this may seem very unhealthy, like everything else, if eaten in moderation it is acceptable.  Also, after cooking and before serving, the potatoes should be drained on kitchen paper to absorb excess fat, so they can be a little bit healthier to eat !

    I've used olive oil to roast potatoes. It works very well. If you want to avoid a strong flavor from the olive oil, do not use extra virgin. Look at the olive oil on the store shelf, the lighter the color, the better to use for roasting, etc., since the flavor is not as strong.

    Just rub the potatoes lightly with the olive oil, and then add the seasonings you'd like to flavor the potatoes. I usually put them on a cookie sheet covered with aluminum foil. I roast them at 375 degrees until they are done. I use a fork to check for doneness. The key is to use just a light coating of oil. I hope you try this way and you enjoy them. Olive oil should never be used for frying.
