well, i have often cut the amount of butter or margarine down a bit- say if a recipe calls for 2 sticks of butter, I may use 1 and 1/2 sticks, and about 1/2 cup less sugar if the recipe calls for 2 cups. I have used the lower fat "spreads" instead of butter, but they have alot of water and can make the cookies spread too much. Many people have subbed. applesauce (smooth not chunky) for theoil in cakes, do not know how this would work in cookies. Using egg whites only will help, you'll need more whites than a whole egg. THis will make the cookies have a cakey texture. Why don't you go to your library for healthy cookie recipes? If you want real healthy ones, choose oatmeal cookies, add dried fruit like raisins or dried cranberries or cherries, and pecans or walnuts. Sometimes it is better to leave a recipe for cookies etc alone and just eat them in moderation. But experiment with these ideas til you get what you want. GOd bless and happy baking!
