Crispy fried chicken can be prepared by doing the following- mix one cup of flour, salt and pepper to taste and cayenne pepper. Keep it separate. Next combine a lightly beaten egg and a quarter cup of milk and set them aside. In a thick bottomed vessel melt shortening on high flame.
Simultaneously wash the chicken pieces and drain well. Coat the chicken pieces one at a time with the egg and milk mixture and then dip them in the flour. Test the shortening with a thermometer is the temperature is around 360F add the chicken, reducing the flame to medium high and when the chicken gets golden brown flip and do the same on the other side. This type of chicken is ideal for a picnic but requires refrigeration if one is planning to keep it overnight.
