Making cheese at home is very easy. You would be able to make cottage cheese in this way. This one is the simplest to make. Other kinds are too complex and require procedures, ingredients and conditions that are difficult to make at home.
For a block of cheddar cheese, you would need a liter of milk and a lemon or two.
Bring the milk to a boil and when it has boiled, lower the heat on your stove and add the juice from 2 small lemons or one large one.
You will see that the milk instantly curdles. Now all you need to do is to pour the contents of the saucepan through a muslin cloth. Most of the liquid will pass through almost instantly and the curdled part stays on the cloth. When you are done, tie the muslin cloth into a small tight bundle by collecting all four ends. Then hang this bundle from a high place (may be a cupboard handle?) and put another bowl under it which would collect all the excess fluid.
Leave it this way overnight. When you come back in the morning, untie the muslin package. You will find a lump of cottage cheese in it. Shape roughly into a cube by patting its sides with a broad knife or spatula. Enjoy with toast or serve with crackers and fruit on cocktail sticks. Bon appetit! :)
