Gallbladder contains bile which is produced in the liver. Function of gallbladder is storage of bile. Bile is used to digest fats and is released from the gallbladder when needed. In case of gallstones, bile becomes obstructed and can not be released, so, fats can not be digested. Foods with cholesterol means fatty foods, so, you can not eat these foods if you have gallstones.
