My Yellow Squash Has Grown Very Large. Can I Still Eat It?

My neighbor went on vacation this past week and I tended to his garden. There were about 2 dozen huge yellow squash)18" plus. My other neighbor says they are no good when they get that big. They are not rotting. Just very large. I would hate to throw them away. Any suggestions how to cook them? Can I freeze them? They are also about 8" in diameter. I appreciate any help. Terry

Yes you can eat it, the older and larger it gets, the tougher the skin is the general rule. Most squash tastes best while still young and small, this is true for most green and yellow varieties. Older, larger squash is best when split, buttered or stuffed, and then baked. You can peel it, cut it up and steam it for a tasty treat.  Not knowing which variety you are referring to. I really can't add much more to this but you can freeze any squash if it is properly prepared for freezing
