What Pastry Is Used In Quiche?

    Bread dough was commonly used to make quiche but not so much nowadays. Now, people tend to use puff pastry. Puff pastry is light and flaky and contains layers of butter, and can be stored in the refrigerator for a week or if you wish, can be frozen for three months. The basic ingredients for puff pastry are flour, butter, salt and water. Alternatively it can be bought pre-made from the shops.

    Shortcrust pastry is another type that is used and is very easy to make. The ingredients are plain flour, salt (just a pinch), lard and butter. The pastry is made using the usual rubbing in method, and is placed in a polythene bag and left to rest for 30 minutes in the refrigerator. Shortcrust pastry contains no raising agent, and so doesn't puff up during baking, though self-rasing flour can be added if you wish.
