Cucumber Pickle is one of the most easiest recipes. You can add a lot of variety to them by adding more ingredients. However, here is a basic recipe:
- 7 lb Cucumber
- 2 qt. Pure apple vinegar
- 1 Tbsp Salt
- 1 Tbsp pickling spice
- 4-1/2 lb sugar
First of all soak the cucumbers in lime for 24 hours. For this use 3 cups of lime to 1 gallon of water. After 24 hours have passed, soak for 4 hours in cold water. Meanwhile change water after every hour.
Then peel, slice and cut the seeds from the cucumber. Make pickle sticks. Then take a large stainless steel boiler and bring sugar, spices and vinegar to boil. Add cucumbers to it and bring to boil. Boil slowly for a hour more. If you allow them to stay in boiler overnight the result will be better. Bring it back to boil in the morning. Then can and seal covering the cucumbers with vinegar and sugar mixture. Then seal them in sterilized jars of your own choice.

Here's a fairly easy recipe for making cucumber pickle. You'll need the following ingredients for it:
INGREDIENTS:
1. Four large cucumbers.
2. Two medium- size onions.
3. 50 grams of salt.
INGREDIENTS FOR SYRUP:
1. 570 ml white vinegar.
2. 454 grams soft brown sugar.
3. 1.5 teaspoon of turmeric powder.
4. 1.5 teaspoon ground cloves of garlic.
5. A tablespoon of mustard-seeds.
METHOD:
Wash the cucumbers and onions and slice them very thinly. Take a large bowl and make a layer of onions first and sprinkle with salt, then layer the cucumbers over the layer of onions and sprinkle with salt. Weight it down with a plate and leave it for three hours. After three hours, drain away the liquid from the bowl and rinse the onions and cucumbers twice. Cook the sugar, spices and vinegar in a not-stick pan over a low flame till the sugar gets dissolved. Then add the onions and cucumber to the pan and bring it to a boil. After about five minutes take the vegetables out of the pan and set aside, while letting the rest of the broth simmer over the flame for about twenty more minutes. After ten minutes or so, when the vegetables have cooled down a bit, put them in a sterilized jar. Then pour the syrup over it. Cover the jar with a sterilized cap.
