Can U Use A Whole Fillet Beef In A Beef Wellington?

    Long as you have sufficient pastry to cover it use the whole fillet.  Where is my invite!

    Im just a bit worried that the centre which u usually use for steaks will b juicy and tender and the head and tail will b dry. Im doing at my place of work so gonna do a whole one if its ok to do so and portion it when cooked. U r more than welcome to try it come to the hawkley inn in liss,

      Yes, commonly done for large dinner parties, as a fillet is usually in the 4-5 pound region.

      Here's a tip to improve evenness of cooking - cut the ends of the fillet off at the point where they're down to about 2/3 of the thickness of the centre section, and press them together back to back, butting them up to the centre section. After the dish is cooked, you won't notice the join, and you can much more easily achieve a consistent medium-rare. Of course, if you know that some of your guests like it rare and some like it well done (Philistines!), then ignore that tip!
