3 tablespoon oil
1½ cups water
1 ½ cups thick coconut milk
1 carrot cut in 1 ½ in match sticks
1 small eggplant, cut in 1 ½ in length
1 hard bean curd cake, deep fried and quartered
Salt to taste.
Spice paste
2 red chilies
3 candlenuts
5 shallots
½ teaspoon turmeric powder
½ teaspoon dried shrimp paste'
1 teaspoon dried prawns, soaked for 5 minutes in warm water
Chop the spice paste ingredients and blend finely, adding a little oil if necessary to keep the blades turning. Heat the oil and fry the blended ingredients for 5 minutes, then add the water and coconut milk and bring slowly to a boil. Add the prepared vegetables, bean curd and salt and simmer, uncovered, until the vegetables are just cooked. This dish is a Nonya adaptation of Malay-style vegetables simmered in seasoned coconut milk. This dish is a very healthy dish and it also contains a number of different vegetables. As it is said that it is important for human to eat vegetables, so this is just the right choice for veggie lovers.
