If my mom and her sister had kids then we are true 1st cousins and our kids are true 2nd cousins. Then how are we related to our 1st cousins kids? Are we 2nd cousins once removed????

It is a bit complicated but let me explain you
Your 1st cousin's kid would be your 1st cousin, once removed.
Your kid and your 1st cousin's kid would be 2nd cousins.
Now, if your 1st cousin's kid had a child, it would be your 1st cousin, twice removed and so on.Hope you get the point.
