What Is Meant By Game?

The dictionary defines game as "wild animals and birds hunted for sport or food, or the flesh thereof." Generally, when we talk about game we mean one of the following birds: pheasant, wood-pigeon, quail, partridge, grouse
or one of the following animals:
hare, wild rabbit, venison (deer), wild boar (extinct in Britain, though recently reintroduced; occasionally imported as food)
Game is more popular during the winter months, partly because most game birds and animals are in season then, and partly because, even if available in summer, most game is too rich and heavy for hot weather.  The word "gamey" refers to the strong, rich smell and taste of game which has been hung, sometimes for over a week, to strengthen the flavour before plucking and drawing (removal of feathers and internal organs.) If you are hanging game yourself, make sure you keep it in a cold, dry place with fresh air and hang it by the neck.
