Well it loses its virginity the same way we all do - it gets messed about with.
So the first cold-pressed is the most dark-coloured and full-flavoured. Then the olives can be pressed again, warmed up, filtered, you name it it happens....it is still olive oil, but doesn't have the same fruity flavour and dark colour.
Quite often you don't want that richness anyway, like for cooking it can be a bit heavy and drown out other flavours, so don't feel like you HAVE to buy extra virgin!
