Different people have their own recipes and they all taste great. I have found my grandmother's recipe the best. I bake it as it is and slice it with tea or use this recipe as a base for making other cakes like chocolate cake, cinnamon, coffee and almond. It is also very easy.
Ingredients:
2 cups plain flour
2 teaspoons baking powder
1 cup sugar
4 eggs
1 cup oil
1 tablespoon milk
Method:
Process oil and sugar together to make a smooth paste. Then add eggs and beat well until smooth. Now, sift the flour and baking powder together and fold into the egg/sugar/oil mixture. Add milk.
Bake for 30-40 minutes at 350oC.
To make chocolate cake:
Add 1/2 cup cocoa powder to the flour before sieving it.
For coffee cake:
Dissolve a teaspoon of coffee in the milk before adding it to the cake mixture.
Cinnamon:
Sieve a teaspoon of cinnamon powder with flour. It tastes especially good with some honey and cinnamon tea and is very light and refreshing.
Almond:
Just plonk in a handful of peeled and chopped almonds, that have been soaked in water overnight, into the batter. Decorate the top with some almond halves before baking.
