First I should ask do you both have a will? Without it the state will automatically make one for you, which is much more expensive for the estate. Next definitely add him to the property unless you don't like him, then the added gift will be okay.

Then put your main assets into a trust, with a pour over clause added to be put the small stuff into the trust upon your death.
