You can say good-bye in Japanese only two ways that I know of. One is the less appropriate way to say it, mata ne. The other more appropriate way to say it is Sayonara.

Mata Ne is said just a general goodbye, Sayounara is said when you won't see the person for long. Occasionly even, "bai bai" is said.
