    The basic roast chicken method ( 20 mins per pound plus 20 mins, cook at 180 degrees and leave to stand for 10) usually applies whatever flavouring you choose. Some ways to make your roast chicken a bit different include:
    -mix some soft, strong cheese (Boursin or goat's cheese; Philadelphia is probably too mild) with the juice and zest of a lemon. Stuff this under the breast skin (and leg too if you can reach) and roast as normal, in a roasting back or covered in tinfoil. Make a sauce with the juices (fat spooned off), and a little reserved cheese and lemon juice
    -stuff some melted Stilton or other strong cheese under the breast skin, with some thinly sliced button mushrooms if liked.
    -roast chicken in a large tin or pot, with peppers, onion, whole garlic and tomatoes tucked round it. Spoon over the juices instead of making gravy.
