Well if an animal only eats plants, it surely needs to be able to digest cellulose? In most cases, its not actually the animal that contains the enzymes which digests cellulose, but rather bacteria contained in its stomach or intestines. I hope this was the answer you were looking for, but I've never heard of exclusively leaf eating herbivores that have no mechanisms for digesting cellulose. Alternatively, could the animals you are studying just eat the fruit of plants? The fruits of plants don't usually contain cellulose, but if your referring to the leafs then that's about all I can tell you.
