Im going to assume you mean that they bite you/ your hands when you hold them.
They are most likely afraid or not used to being held. Unfortunately the best way to break them of this is to hold them. Wear some clean gloves, I recommend some good leather gloves, hold him/her every day and he will get used to it eventually you can take the gloves off and not get bit.
(note: Dwarf hamsters are more likely to bite.)
