You can listen to music
you can get on youtube(that's the only video website, google videos and things like that wont work)
you can take notes
you can play all sorts of game
You can jailbreak it (mine is jailbroken, and it is amazing you should jailbreak one if you can)
there are many different utility apps you can get
you can search the website(works at good speed)
oh and if you jailbreak your ipod you can do sooooooooooo much more
oh and the games are amazing. The ipod touch is amazing worth every penny
