Is Ratatouille Vegetarian?

    Yes it is. Ratatouille is a vegetable stew that consists of tomatoes, onion, garlic, green bell peppers, aubergines, herbs, salt and olive oil. It can be eaten with bread or rice.

    To make a simple summer vegetable ratatouille, you need: 3 cloves of garlic (minced), 2 onions (slice them into thin rings), a medium cubed eggplant, 2 cubed courgettes (zucchini), 2 medium yellow squash (cubed), 1 diced yellew bell pepper, 2 green seeded and cubed bell peppers, 1 chopped red bell pepper, 4 chopped plum tomatoes, half a cup olive oil, a bay leaf, 2 tablespoons fresh chopped parsley, 4 sprigs of thyme (fresh) and some salt and pepper.

    Heat 1 1/2 tablespoon of olive oil over medium to low heat (use a large pot). Add the garlic and onion. Cook until soft. Heat 1 1/2 tablespoon olive oil in a large skillit. In batches, saute the courgettes until slightly browned on all sides. Remove and place in a pot with the garlic and onions. Saute the remaining vegetables in batches and add 1 1/2 tablespoon with each batch. After the batches have been sauteed, place them in the pot with the other ingredients. Use the salt and pepper to season and add the thyme and bay leaf. Cover the pot and cook on medium heat for 15-20 minutes. Add the tomatoes and parsley and cook for a further 10-15 minutes, stirring occasionally. Finally, remove the bay leaf and season again.
