This is important as you need to make sure that you haven't produced the work for nothing. Never send a completed portrait to a client before you have been paid, because you may end up not being paid at all. The best thing to do is request a 50% deposit on all commissions. This ensures that you will at least recieve half of the full price if the person that you have produced work for fails to pay up.

Rejection fees are also a good idea, as this will entitle you to recieve some of the full price even if the person does not like what you have produced.

In terms of methods of payment, you could either send your client an invoice and they'll send you a cheque, or you could request that they pay you via PayPal, though both you and your client will need a PayPal account to do this.
