You can use all of these... A bitmap is all black--no grays, so I would not use that with a photo, that is usually line art, rgb is red/green/blue... Most photo places use that mode, cmyk is cyan/magenta/yellow/black... That is what large print shops use, your magazines are printed in cmyk. Grayscale is what it says... Hope that answers your question.
